Beignets, also known as 'French doughnuts' are fried square-shaped pieces of dough covered in powdered sugar. Whenever I think of beignets, as any other Disney-obsessed individual, I'm reminded of the delicious animated beignets in 'Princess and the Frog' — I can't tell you how many hours I've spent drooling over those sugary delights. Using Binging with Babish's recipe, I made a quick yeasted dough. I always prefer using yeast in my doughs because it makes them so airy — the fermentation of the
I made these cookies a few days ago! Here is the recipe I used — they turned out extremely delicious. Some tips I have for cookie making: Use a glass to help round the cookies right after you take them out of the oven. Fit the rim of the glass over the cookie. Move the glass around in circles till the cookie is rounded. Stick more chocolate chunks/Oreos on top of the cookies before baking. Don't be worried if your cookies look slightly undercooked before taking them out of the oven. They continu
I love this time of the year — the snuggling in warm blankets and drinking hot chocolate, all while the Glee version of all my favourite Christmas songs play in the background. I made these cookies and hot chocolate to go with the Christmas spirit. My dad and I ate the warm food while watching Jeopardy! and it made my heart happy. I made a classic chocolate chip cookie as a treat. Here's the recipe (it's inspired by all the recipes I've seen on the internet — it's nothing new) Ingredients (about
It would be this dessert! Recently, I've been trying to explore and make desserts out of my comfort zone. Tiramisu is one dessert that I have not yet mastered — even though I have made quite a few variations over the years. However, I didn't want to make a classic tiramisu, so I switched it up a bit. Instead of making a tiramisu base, I made a chocotorta "base" using equal amounts of dulce de leche and mascarpone cheese. If you're interested, here's an easy video guide to making chocotortas. Als
I love the idea of making desserts other than cake for important events. So, I made pie. I used John Kanell's chocolate pie recipe, and the pie came out absolutely delicious. It's been a while since I made anything this finger-licking! Speaking of pie, I was recently going through one of my old essays on the topic "as easy as pie." I thought it would be fun to attach a few screenshots for a giggle! I think my writing style and my baking have improved tenfold since then, so it was interesting to
Happy Diwali, y'all! For some, Diwali means finally getting together and catching up with their families. For others, it symbolises an occasion to get in touch with their religious side. For me, it's just an excuse to stuff my face with kaju katlis. Originally, I had no plan to make anything today, but as soon as I saw this video, I got up and started to make kaju katlis. We already had a box of store-bought kaju katlis, but oh well. You can never have too many, right? These literally came toget
Recently, we went to VietNom in Cyber Hub and had some of the best Vietnamese food I've ever tasted — pho, vegan Saigon meat, and baos! Inspired by the meal, I decided to make hand-pulled noodles, Asian cucumber, and bang bang cauliflower. They're not traditional Vietnamese dishes, but they do use similar techniques and have a similar flavour palette. I used this recipe to make the Asian cucumber salad and this recipe to make the bang bang cauliflower — both of them tasted amazing! I had such a
Okay, fair warning, I made these lemon bars two weeks ago — I've not had a single moment to upload my recent bakes. But do expect a storm of pending posts soon! I love everything lemon, so I've been wanting to try this recipe from Sally's Baking Addiction for over a year. Sally never falls short of expectations, so it's always a delight to test out her recipes. The texture of these lemon bars is flawless! They're smooth and the perfect balance between wet and dry. I blended the lemon filling for
Although we're not Sikh, we celebrate Guru Nanak Jayanti (the birth of the first Sikh guru, Guru Nanak). My mom loves his teachings and proverbs and regularly shares them with us. On the occasion of his birth, I decided to distribute 25 cupcakes to the guard bhaiyas and didis around my apartment complex. A few other people were distributing food, and, although cliché, it made me happy to see everyone unite despite their religious backgrounds. Also, if you're interested, I used this vanilla cupca
This cinnamon babka recipe has my heart. I've always thought making babka was a complicated process, but it is just making bread and braiding it — a little underwhelming, honestly. This babka had a similar process to a cinnamon roll. I never quite got it when people called cinnamon roll bread, but I guess I do now! I lathered this in cream cheese frosting as soon as I got the picture. It was a little tough to chew, though. I find it best to eat when it's at room temperature or warm.
If you're having a bad day, my number one tip is to get up and eat a filling breakfast that makes you feel warm inside. Enjoy it while watching an episode (or five) of your favourite TV show, and the Shukla guarantee* is that you'll feel 10% better than when you started. I pushed myself to get out of bed and make waffles today, and I am so glad I did! I made about ten waffles — don't worry, I froze half of them — using the Preppy Kitchen waffle recipe. I baked them for five minutes at 180 degree
It was nani's 75th birthday today! What a huge milestone. We had a wonderful dinner in Delhi with our extended family. Towards the end of the dinner, everyone got up to toast nani and said these cute-on-the-spot speeches about her. I loved it :) I didn't want to make a cake for a birthday, because that's cliché and I wanted to do something different. So, I made cinnamon rolls! I had loads of leftover bread flour from my research paper experiments, so I put it to use here. I used this recipe, and
Day 361 (25th August) Okay, I've been using leftovers quite a bit. But, also, it's not a good idea to waste, so don't come for me. I had coffee caramel left over from yesterday, so I made a coffee caramel iced coffee! Here's the recipe (one serving): Ingredients: Two tablespoons of filter coffee Two teaspoons of coffee caramel 3/4 cup of whole milk About six ice cubes Optional: Whipped cream and extra coffee caramel to top Instructions: 1) Melt the coffee caramel in a microwave for thirty second
Day 364 (28th August) This single-serve brownie was heavenly. So, it shouldn't come as a surprise that the recipe was from Ash Baber. It uses melted chocolate as well as cocoa powder, which makes it so rich and delicious. Also, it uses a whole egg, which causes the brownie to be so decadent. If you're looking for the perfect dessert for your meal, I'd recommend this brownie. Just pop it in the oven before lunch, and take it out as soon as you're done! I served the brownie with coffee and walnut
Day 363 (27th August) I made these baked garlic bread pieces for breakfast. 10/10, would recommend. Here’s the recipe: Ingredients: Eight small slices of bread (I cut mine from a subway multigrain bread) Two and a half tablespoons of softened butter Five to six cloves of garlic Half a teaspoon of mixed herbs Half a cup of shredded Gouda cheese Optional: dip of your choice and extra mixed herbs Instructions: Preheat the oven to 180 degrees Celsius. Mince the garlic or use a garlic press to crush
Not going to lie — I was feeling so stressed today. So, I decided to make a Russian Medovik cake. This cake has been on my bucket list for so long. Because I was stressing so much about school, I thought it might be good to get my mind off things for a bit while still getting something done. I spent the entire afternoon in the kitchen, rolling each layer to perfection till I got this cake. It is definitely a hard process, but the end product is so, so delicious. It kind of reminds me of Biscoff
Fall is here, and I'm in love! I made these pumpkin muffins about two weeks ago. I found the recipe on one of my favourite channels, Moribyan. These muffins are supposedly a copycat of the Starbucks pumpkin cream cheese muffins. I can't say, though, because I haven't had the original ones. These muffins were tasty, though! I'm still surprised how something as weird as a pumpkin can turn into something so delicious. The cream cheese filling deflated when I pulled the muffins out of the oven. So,
I had high hopes for this cake, but quite a few things awry during the baking process. I started off with this matcha cake recipe. Since I didn't have coconut cream, I decided to substitute it with yoghurt and vinegar. This turned out to be a supremely bad idea. Yoghurt with acid is an excellent substitute for egg, one that I use in almost all of my eggless bakes, but this time the ratio was off. I added excess yoghurt and less flour. This combination made the cake gummier. It felt as though I'd
Day 362 (26th August) Avni's in town! She's my cousin and she's come to visit us before she leaves for college to STANFORD Y'ALL (she's super talented :o). I wanted to make something special to welcome her, so I made these brown butter chocolate chip cookies from Bon Appétit. Instead of adding toffees, I added a range of Green and Black's chocolates. I really liked it — I think the different flavours paired well together. I broke a few cookies because I tried to perfect the edges when they were
Yes, I do know teachers' day was over a month ago. Unfortunately, we had exams going on so we couldn't celebrate in school until today. The twelfth graders put on a big show with a play, songs, and dances. As a part of the celebrations, we also had a food table. This was my contribution to the table. This is a very short post, but I honestly don't have much to talk about today (yes, this is shocking and momentous). If you're interested in the cookie recipe, here it is! FYI these cookies are fres
Day 365 (29th August) This is it — the last post of my 365-day challenge. I feel an overwhelming surge of pride because of how far I have come, but I also feel a kind of loss — for so long, I had uploaded one post a day, and now that's over. As a final goodbye, I want to share my learnings from this journey. At the end of this challenge, I recognise three things: 1) As cliché as it sounds, it's possible to do anything as long as you put your mind to it. Sure, I did have to come up with creative
I lied. This is not a strawberry banana smoothie. I click-baited you. However, this is my favourite smoothie recipe. It comes together in about five minutes and requires minimal effort! Here's how to make two servings: Ingredients: 250 grams of frozen mixed berries 250 ml of milk One tablespoon of jaggery powder One tablespoon of peanut butter About 50 grams of muesli Instructions: 1) Add the frozen berries and milk to a blender. Blend until smooth. If needed, add more milk! 2) Add a tablespoon
For the longest time, I thought caramelised onions were caramel sauce with onions. I was proven wrong at the ripe age of 12. How I went that long without realising this is a mystery to me. The caramelisation of onions is non-enzymatic browning because we use heat to make the onions brown — not oxygen. This is an example of my favourite kitchen reaction, the Maillard reaction! If you notice, caramelised onions are much smaller than regular onions. I used half a kilo of onions (about three cups) a
This apple crisp is one of the best things I've ever made! I took inspiration from apple crisp recipes on the internet and came up with this one. Also, I used text on the image for the first time! Let me know how you like it. Recipe (Two Servings) Ingredients: Two medium-sized apples, cut into bite-sized pieces One teaspoon of cinnamon Half a teaspoon of lemon juice One tablespoon of powdered sugar One-third cup of brown sugar One-fourth cup of all-purpose flour One-fourth cup of oats Half a tea
