Mini Chilli Cheese Aloo Kulcha Recipe by Archana's Kitchen

Mini Chilli Cheese Aloo Kulcha Recipe is a simple kulcha stuffed with melt in the mouth cheese. This cheese kulcha can be paired along with dals and gravies, and for a change can be served as is as a short eat with your other appetizers.  I have served these delicious Mini Chilli Cheese Aloo Kulcha with a roasted garlic dip made with Britannia roasted garlic cheese spreadz, hung yogurt, cucumber and saffron. This is a refreshing and mouthwatering dip can be made ahead of time and stored in the refrigerator as well. This dip tastes great with chips and pakoras as well.  The kulcha dough is made by combining all purpose flour and whole wheat flour, flavoured with green chilies and the addition of yeast makes all the difference to the texture of the kulcha.  Stuffing it with grated cheese, lifts up the kulcha, adding another dimension of taste to this lip smacking Chilli Cheese Stuffed Kulcha. Britannia Cheezza is a a stringy and melty cheese that is packed with flavour. The Britannia Cheezza has a delectable mix of Mozzarella and Cheddar which gives these Kulcha’s the cheesy twist. Serve Mini Chilli Cheese Aloo Kulcha Recipe along with Tadkewali Masoor Dal or Dum Murgh Aatishi, Pickled Onions for a simple yet flavoursome party meal or even a special weekend dinner.  Try our other Kulcha recipes:  Paneer Kulcha Recipe (Cottage Cheese Stuffed Leavened Flatbread) Aloo Kulcha Recipe (Spiced Potato Stuffed Indian Flat Bread) Stuffed Vegetable Kulcha (Mixed Vegetable Stuffed Indian Flatbread)

Andhra Style Palakura Vepudu with Garlic Recipe | Palak Stir fry by Archana's Kitchen

Growing up in coastal Andhra, a quick Palakura Vepudu recipe was my mom's answer to week‑night dinners—fragrant curry‑leaf tempering, tender spinach that stays vibrantly green, and a mellow hit of garlic. This South‑Indian stir‑fry comes from the Telugu‑speaking regions where “vepudu” simply means “pan‑roast.”  Andhra cuisine is known for bold chilli heat and aromatic tempering. Using everyday pantry spices keeps the dish authentic yet fuss‑free. Mustard‑cumin tempering adds nutty depth, urad dal gives tiny crunchy pops, while spinach wilts into a juicy, mildly spiced tangle. A squeeze of lemon at the end brightens everything. Iron‑rich spinach teams up with anti‑inflammatory garlic, protein‑packed urad dal, and antioxidant‑loaded curry leaves. In winter—peak spinach season in India—the greens are sweetest and cheapest. Serve this Palakura Vepudu recipe with hot steamed rice, Andhra Dosakaya Pappu and a dollop of homemade ghee, or roll it inside Jolada Roti for a high‑fiber lunch box. A cooling cup of spiced buttermilk (chaas) rounds out the meal. if you are looking for more Spinach Recipes, here are some that can be made for your Indian Lunch or Dinner:  Palak Paneer (Spinach in Cottage Cheese Gravy) Spinach Rice Recipe (Palak Pulao) Spinach Paneer Kofta Curry Recipe
