Fresh Broad Bean Recipes 1. Broad Bean and Feta Salad This fresh salad is a great way to get your daily dose of protein, vitamins, and minerals. It features fresh broad beans, feta cheese, and a light dressing made from olive oil, lemon juice, and herbs. The combination of flavors makes this salad delicious and healthy. Serve it as an appetizer or side dish. Ingredients: - 2 cups fresh broad beans - 1/2 cup feta cheese, crumbled - 1/4 cup olive oil - Juice of 1 lemon - 1/4 teaspoon each dried oregano, basil, and thyme - Salt and pepper, to taste - 2 tablespoons chopped fresh parsley Instructions: 1. Shell the broad beans and rinse under cold water. 2. In a large bowl, combine the broad beans, feta, olive oil, lemon juice, herbs, salt and pepper. 3. Toss to combine and let stand for 10 minutes. 4. Sprinkle with parsley and toss to combine. 5. Serve immediately or chill and serve later
